Swiss Chicken Roll Ups with Toasted Walnut and Pear Salad

Here is a HEALTHY dinner...that's EASY and FILLING too!
Swiss cheese is more of a dry cheese so it goes PERFECTLY inside of a chicken breast!  You and the kids will ALL love this one!

So I have had a REALLY busy and LOOONG day!  I think it must have been that way for my kids too because we were ALL just really cranky.  Had lots of places I had to be or had to 'take someone to be' and OUR dinner hour ended in tears.  I will NEVER add the Sundried Tomatoes to this recipe AGAIN!  It is just not worth the battle!  Other than that....this is one of my kids FAVORITE meals!  Then...my husband comes home, and all is quiet and settled!  Ironic...then he has NO idea how things REALLY were! Ha! Ha!
Swiss Chicken Roll Ups with Toasted Walnut and Pear Salad!

Preparation Time: About 15 minutes
Cook Time:  About 20 minutes
Number of Servings: 4
                                                                                     
Swiss Chicken Roll Ups:
4 - Boneless Skinless Chicken Breasts
1/4 - cup of Sun Dried Tomatoes 
4 - 1 oz Slices of Swiss Cheese
12 - Slices of Canadian Bacon 
1 - Egg
Salt and Pepper
Pam Cooking Spray

Salad:
2 - cups Baby Spinach
1/8 - cup Toasted Walnuts
1/2 - medium sized Pear (chopped into bite size pieces)
1/8 - cup Feta Cheese
2 - tablespoons Extra Virgin Olive Oil
2 - tablespoons Balsamic Vinegar
Pepper


Preheat oven to 400 degrees
Prepare 1 cooking sheet with tin foil and spray with Pam Cooking Spray.



Start by cutting each chicken breast in half length wise like a sandwich...but don't go all the way through!















Pound out the chicken flat.
















Start preparing the filling.  Dice up your Sun Dried Tomatoes and slice your Swiss Cheese














Slightly beat your egg and put it on a plate.  Then put your Italian Bread Crumbs on another plate.











 


On one side of a flattened chicken breast sprinkle salt and pepper and then place three slices of the Canadian Bacon, your Swiss Cheese and your Sun Dried Tomatoes.  Roll up your chicken (almost like a tortilla) and secure with toothpicks.

NOTE:  Remember...I will NEVER again use Sun Dried Tomatoes in this recipe...wasn't worth the battle with my kids.





Roll your rolled up meat in egg mixture and then in the Italian Bread Crumbs and place on your prepared cooking sheet. Spray top of chicken lightly with Pam Cooking Spray.










Repeat process for each Swiss Chicken Roll Up and then place in the oven for 20 minutes.

Now....you have time to set the table!!!!  This is super simple tonight....we were crazy busy.  Still makes for a nice family dinner though.

Now let's start the salad while your chicken is cooking.  Toss the baby spinach, chopped pears, Walnuts, and Feta cheese into a large serving bowl. 
















Just when chicken is done, toss the salad with Extra Virgin Olive Oil and Balsamic Vinegar.  Then sprinkle fresh pepper on top.











 
 Now take your Swiss Chicken Roll Ups out of the oven and DINNER IS SERVED!
