Whole Wheat Cinnamon Waffles with Strawberry Sauce


Whole Wheat Cinnamon Waffles with Strawberry Sauce!
(My way of making them healthier)

 So I've had a waffle iron for years....but my son didn't know what it was and he's five.  That means I haven't used it in several years!  (I usually make pancakes :)  So my son asked for waffles, I said I would make some on SATURDAY morning for breakfast.  He said, "You can MAKE them mom?  How do you get the holes in them"  It was SUPER cute and he didn't forget!  He woke me up this morning asking for his waffles reminding me that I PROMISED!




Nutritional Info Per Serving:  About 300 calories with Strawberry Sauce/Syrup
Preparation Time: About 15 minutes
Servings: 6
                                                                                       
WAFFLES:
1 3/4 - cup WHOLE WHEAT flour
1 - tablespoon of baking powder
1 - tablespoon of cinnamon
1/4 - teaspoon of nutmeg
1/4 - teaspoon salt
2 - cups Non Fat Milk
2 - egg yokes
1/4 - cup cooking oil
1 - tablespoon vanilla
2 - egg whites
Pam cooking spray

STRAWBERRY SAUCE/SYRUP:
2 - cups strawberries (I use frozen because that's what I keep in the house)
1 - tablespoon cornstarch
1/2 - cup water (increase to 3/4 cup if not using frozen strawberries)
1/4 - cup sugar



Start by heating up your waffle iron.

Add all dry waffle ingredients into a bowl and mix well.  I use this WHOLE WHEAT flour....LOVE IT and it adds nutrition to the waffles. 


Then add all your wet waffle ingredients EXCEPT the egg whites and mix well.  Add wet mixed ingredients to dry mixed ingredients and mix until smooth.

Beat your egg whites on HIGH speed until stiff white peaks form!  Fold into your waffle batter.

Spray your waffle iron with Pam cooking spray and add some batter. Close lid and cook for 2-3 minutes or until cooked through.   Repeat until batter is gone.  Should make about six waffles if using an iron my size.

CAREFUL:  In this picture the batter doesn't look like much but it expands and makes a full waffle....so you don't need to fill the whole bottom of the iron.

NOW...for the strawberry sauce/syrup.  Add your frozen strawberries, water and sugar to a large pot and bring to a boil.  Break up the strawberries and cook them down for about 3-5 minutes.
Kick your heat down to medium and add your cornstarch mixing thoroughly. And...it's done and ready to serve on top of your waffles!  I know...SUPER SIMPLE RIGHT??
ALLLLLLLL Done!  Yup....Kids are happy and so are YOU because you are giving them a  healthier version of waffles.  The cinnamon and vanilla mask the whole wheat flour too so they don't complain.  Try a bite yourself.....YUMMY!

Super Simple Smoothie




Super Simple Smoothie! - Stawberry Banana
(And soooooo CREAMY!)

Note:  This is SUPER healthy and fast....but so GOOD my kids consider it dessert!

 This recipe is SERIOUSLY sooo simple but sooo delicious!  We even add a scoop of PROTEIN powder for my teen daughter, husband and I!  Adds more nutrition and a great breakfast!

Nutritional Info Per Serving:  About 200 calories
Preparation Time: About 5 minutes
Servings: ONE
                                                                                       
1 - 6oz container of greek yogurt (we used strawberry greek yogurt here)
4 - Frozen Strawberries
1 - Banana, sliced
1/4 - cup Non Fat or Reduced Fat Milk


I ALWAYS use my MAGIC BULLET and this is no exception!  It's even listed on MY FAVORITE THINGS!




I just add all the ingredients into the Magic Bullet. (you could use a blender too)

















Blend......and Pour into a fancy glass to make it feel like a SPECIAL treat!

PRESENTATION can MAKE it special!
