So we went to my Mom's for Easter Dinner and I was to bring a potato dish for about 20 people. I decided to make Cheesy Bacon Scalloped Potatoes! They turned out delightful! And I was worried .... because I took a base recipe and changed it all around! YIKES!
HAPPY EASTER EVERYONE! HE IS RISEN!
Nutritional Info Per Serving: I HAVE NO IDEA AND I DON'T WANNA KNOW!HAPPY EASTER EVERYONE! HE IS RISEN!
Preparation Time: About 30 minutes
Cook Time: About 60 minutes
Number of Servings: 20
8 cups thinly sliced potatoes
6 tablespoons butter
6 tablespoons flour
2 1/2 cups milk
8 oz cream cheese, cut into cubes
2 teaspoon salt
1 teaspoon cayenne
1 pound sharp cheddar cheese, diced
1/2 package of bacon, cooked and chopped into bite size pieces
Pam cooking spray
In a small saucepan over medium heat, melt butter and then blend in your flour until smooth. Add your milk, cream cheese, salt and cayenne. Heat and whisk occasionally until your mixture is smooth.
Don't turn up the heat! Or you will burn the milk! :) Trust me!
Put your bacon in the oven laid out on a cooking sheet or broiler pan about 10 minutes.
Add your cheese all at once to your saucepan and stir until melted and smooth.
Remove your bacon from the oven, blot off grease and then chop into bite size pieces. Add it to your cheese and stir!
OH MY GOSH...THIS WAS SO GOOD!
Spray your baking dish with Pam Cooking Spray. Then layer half of your sliced potatoes in the bottom.
Add half of your cheesy mixture in the saucepan evenly on top of your potatoes.
Add the other half of your potatoes on top and then the other half of your cheesy mixture evenly on top of those. Garnish with a few sprinkles of paprika for some color and WhAAAAA LAAAAa! Throw it in your 350 degree oven uncovered for about 60 minutes!
You are DONE and I MUST say that these turned out SUPER rich and CREAMY...But SUPER not so healthy so I didn't have much and won't make them again until NEXT YEAR! :)
Here was our Easter Dinner Table at my Mom's! Didn't she set such a beautiful table! It feels so much like spring. And the meal she cooked was A...M...A...Z...I...N...G! Thanks Mom!
