Split Pea Soup


My Mom's Split Pea Soup!
Hmmmmmn....Comfort Food!!!!

I KNOW, I KNOW..RIGHT....IT DOESN'T LOOK VERY GOOD...BUT........IT IS!

So this is my MOM's Split Pea Soup and I can still remember the day I actually TRIED the soup!  You see...when you are a kid, GREEN soup doesn't sound very good!  In fact, it took a little convincing with my own kids.  My 5 year old son now believes this is special 'leprechaun soup'!  But he TRIED it and he LIKED IT!  Whoa!  He LIKED IT!

Nutritional Info Per Serving:  About 200 calories and VERY filling!
Preparation Time: About 10 minutes
Cook Time:  About 90 minutes
Number of Servings: 20 (1/2 cup servings)
                                                                                       
1 - 36 oz bag of split peas
3 - 36 oz containers of chicken stock
1/2 pound of lean ham, diced
1 -  medium onion, chopped small
2  - carrots, chopped small
2 - tablespoons herb blend
Salt

Pepper



Bring 2 of your 36 oz container of chicken stock to a low boil over high heat.  Reduce heat to low (simmer) and add your bag of split peas.










Add your chopped onions.....
















And....your chopped carrots.

I CUT MY FINGER!  YEEEOOWWW!














Mix together with your herb blend.

















Once it all starts to break down...you add more chicken stock as needed, your ham and salt & pepper to taste!













And you......ARE.....DONE!  Nummy, healthy...comfort food for the whole  family with VERY little effort!  Just close your eyes....then it won't look GREEN! :)
