Quinoa Crusted Chicken


Quinoa Crusted Chicken!
You HAVE to try this one!

Note: Quinoa is a very healthy grain from Africa available in most grocery stores

So this is my Quinoa Crusted Chicken and I can tell you that you HAVE to try this!  The Quinoa makes a super crispy crust on the chicken and the kids eat it like it's just regular chicken.  This was my super busy night too so again....this is SUPER EASY!

Nutritional Info Per Serving:  About 200 calories! (Depending on the size of your chicken breast)
Preparation Time: About 5 minutes
Cook Time:  About 20 minutes
Number of Servings: 4
                                                                                       
4 - Boneless Skinless Chicken Breasts
1 - cup cooked Quinoa (found in most grocery stores in the bulk bin section)
3 - tablespoons of your favorite Steak Seasoning
1/3 - cup of coarsely chopped fresh thyme
2 -  Eggs, slightly beaten

4 - tablespoons of Extra Virgin Olive Oil



Heat your Extra Virgin Olive Oil over Medium High Heat in a large pan. 


























Add your cooked Quinoa...













 


 Your thyme....













And your steak seasoning together and mix into a medium sized bowl.

CAREFUL HERE....I MADE OURS WAAAAAY TOO SALTY BY ADDING TOO MUCH STEAK SEASONING! (But I used 8 tablespoons....yikes)






 


 Add your eggs to another medium sized bowl.
















Coat each chicken breast in egg mixture, then in the Quinoa mixture and transfer to your hot oil in your pan.

Kick your heat down to medium and cook for about 10-15 minutes on each side.  Careful...you ONLY WANT TO FLIP IT ONCE!  This is how the crust builds up and everything stays in tact.







And then....YES...you guessed it!  Whaaaa LAAAAAA!  Amazing, super healthy Quinoa Crusted Chicken! I paired it with a salad and was done and feeding the family in NO TIME!
