Spicy Chicken with Cayenne & Avocado AND Walnut & Craisin Salad

Party Time..... Woot! Woot! It's my Friday night Baaaaby!  So if you like SPICY.....and CHICKEN...this is the one for you.  The BUTTERY taste of the Avocado mixed with the spicy chicken touches every TASTE BUD you have!  And soooo EASY!  Spicy Chicken with Cayenne & Avocado AND Walnut & Craisin Salad!

Nutritional Info Per ServingONLY ABOUT 450 CALORIESl!!!(with the salad)
Preparation Time: About 15 minutes               
Cook Time:  20 minutes
Number of Servings:4
                                                                                     
Chicken:
4 - Boneless skinless chicken breasts
1/2 -  teaspoon of Cayenne
1/2 -  teaspoon of Pepper
2  -  teaspoons of Salt (I use sea salt)

Salsa:
1 - Avocado
1 -  small red onion
4 - tablespoons of lemon juice
1 - teaspoon salt (I use sea salt)
2 - tablespoons Extra Virgin Olive Oil

Salad:
1 - Head Romaine Lettuce
1 - cup croutons (2 handfuls)
1/4  - cup craisins (1 handful...small)
1/4 - cup toasted walnuts (1 handful....small)
1/4 - cup fat free feta cheese
2 - tablespoons Extra Virgin Olive Oil
2 - tablespoons Balsamic Vinegar


Preheat Pan with Extra Virgin Olive Oil



Add Cayenne, Salt & Pepper together in small bowl and mix












Rub Cayenne mixture on front & back of each chicken breast















Place coated chicken breasts in heated oil pan and cook for 5-7 minutes per side














 Dice small red onion and put in small bowl
Add lemon juice ( I use fresh lemon juice)



When just ready to serve, add peeled, pitted and diced Avocado and toss.










Cut up your head of Romaine lettuce.  Add feta cheese, toasted walnuts, croutons & craisins.












Add Oil & Vinegar and Toss for an AMAZING Taste!













Garnish your chicken with the salsa and OOOOOOOOOOhhhh Baby!  You are in for a TREAT!  I'm not even kidding!  My 5 year old son even likes it!



Note:  If you are not 'keen' on spicy....use LESS of the rub per chicken breast.  It makes a HUGE difference.
