'Jerk' or Classic Caribbean Rubbed Chicken & Pineapple!

Somewhereeee...over the rainbowwwwww....waaaayyyyyyyy..up highhhhhh.....

Let me start by saying....WE NEED A VACATION!

You have NO idea how amazing this recipe is and I didn't either until I tried it!  Sweet but spicy and FAMILY friendly too!

I took a couple different recipes and through one together myself here and I created my own spice jar that holds allll the spicy/sweet goods!  Check the spice jar out or make your own here......

Thank you....thank you and Thank YOU AGAIN for stopping by my blog....!  I at first thought I could maintain this everyday...then every other day.  Now....well I've realized that twice a week is a GOOD compromise.  I do ALOT at home...and I'll post my BEST when I post....come back..visit...and ENJOY!

Nutrition Facts:
CALORIES:  225 with 2 pineapple slices
FAT:  1.5 g
SERVINGS:  4

Heather's Classic Caribbean Rub:
2 - Tablespoons of dried onion
1-  Tablespoon of garlic powder
4 - teaspoons of dried thyme leaves

2 - teaspoons of sea salt
2 - teaspoons of ground allspice

1/2 - teaspoon of gr cinnamon

1/2 - teaspoon ground nutmeg 
1  - tablespoon sugar
2 - tablespoons ground pepper

1 - teaspoon cayenne
1 - can sliced pineapple

4 - 6 oz Boneless Skinless Chicken Breasts

Heather's Classic Caribbean Sauce: 
Juice from drained pineapple
2 - tablespoons spicy brown mustard
1- tablespoon honey
1 - tablespoon\ brown sugar
1 - teaspoon of 'Heather Classic Caribbean Jerk Seasoning' (recipe listed above)

Heat your grill to medium high or 350 degrees.  Spray with Pam cooking spray consistently until meat is added to the grill.  (note...all grills heat differently....id it seems to hot..probably to hot...)



So I start with 3 (for my family of 4 but with little ones) boneless skinless chicken breasts.













And I use my JERK seasoning that I have PRE-made and you can make yourself! 















Then start with a can of PINEAPPLE!  Really....so cheap,,,drain the juice into a pot for sauce....:)













Spray the tops of your Chicken & Pineapple with Pam cooking spray and season generously....












 Now add all your ingredients for your Heather's Classic Caribbean Sauce and whisk heating on a medium heat.










 Throw them on the grill!

Three Pepper Hummus


Three Pepper Hummus !
(It's a DIP, SPREAD, GARNISH --- Great on fish, shrimp, crackers, chips and even a turkey sandwich)

This Hummus seriously surpasses ANY hummus you can find in the store...TRY IT!

Hummus is SUPPOSED to better for you than most other dips and full of all the good fats.  It still needs to be eaten in MODERATION as with anything else, but I have messed around with multiple recipes and COME UP WITH THE BEST!  You will LOVE it!

NOTE:  The way the recipe leads...there will be a little spice but it won't linger.  Add more of any of the peppers for MORE HEAT!

1 - 15 oz can of Garbanzo Beans
6 - - oz roasted red peppers in a jar
2 Tablespoons of canned jalepenos
3 - large garlic cloves
3-  tablespoons of roughly chopped cilantro
3 - tablespoons freshly squeezed lemon juice
1 - teaspoon paprika
3 - tablespoons roughly chopped onion
1 - teaspoon freshly cracked black pepper
1 - teaspoon sea salt
1 - tablespoon chipotle pepper in adobo
¼ - cup extra virgin olive oil





So I start with none other...than YUP...you guessed it....MY MAGIC BULLET!  I'm not even kidding, I use it for EVERYTHING!  Just add ALL the ingredients to your food processor.  My magic bullet's mixing cups are smaller so I split it half and half and then mix it altogether at the end.

























Now just mix until smooth.....




















We serve with these AWESOME chips we found at our local Costco Warehouse but I've seen them in other grocery stores.  They are called FOOD SHOULD TASTE GOOD MULTI-GRAIN CHIPS!



















Just a couple days ago, my mom brought over some stuff for a garage sale we are going to have...stuff she wants to sell.  I found these totally AWESOME Pepper bowls.....SO PERFECT TO SERVE THIS HUMMUS IN!

(So...we are NOT selling them :)
 
Then...you SERVE!  That perfect Hummus is DONE that quick!  Bring it to a party...keep it around the house and use to dip your shrimp in...garnish your salmon with...spread on a turkey sandwich in place of mayo!  YOU WILL LOVE IT!

Spicy Chicken with Cayenne & Avocado AND Walnut & Craisin Salad

Party Time..... Woot! Woot! It's my Friday night Baaaaby!  So if you like SPICY.....and CHICKEN...this is the one for you.  The BUTTERY taste of the Avocado mixed with the spicy chicken touches every TASTE BUD you have!  And soooo EASY!  Spicy Chicken with Cayenne & Avocado AND Walnut & Craisin Salad!

Nutritional Info Per ServingONLY ABOUT 450 CALORIESl!!!(with the salad)
Preparation Time: About 15 minutes               
Cook Time:  20 minutes
Number of Servings:4
                                                                                     
Chicken:
4 - Boneless skinless chicken breasts
1/2 -  teaspoon of Cayenne
1/2 -  teaspoon of Pepper
2  -  teaspoons of Salt (I use sea salt)

Salsa:
1 - Avocado
1 -  small red onion
4 - tablespoons of lemon juice
1 - teaspoon salt (I use sea salt)
2 - tablespoons Extra Virgin Olive Oil

Salad:
1 - Head Romaine Lettuce
1 - cup croutons (2 handfuls)
1/4  - cup craisins (1 handful...small)
1/4 - cup toasted walnuts (1 handful....small)
1/4 - cup fat free feta cheese
2 - tablespoons Extra Virgin Olive Oil
2 - tablespoons Balsamic Vinegar


Preheat Pan with Extra Virgin Olive Oil



Add Cayenne, Salt & Pepper together in small bowl and mix












Rub Cayenne mixture on front & back of each chicken breast















Place coated chicken breasts in heated oil pan and cook for 5-7 minutes per side














 Dice small red onion and put in small bowl
Add lemon juice ( I use fresh lemon juice)



When just ready to serve, add peeled, pitted and diced Avocado and toss.










Cut up your head of Romaine lettuce.  Add feta cheese, toasted walnuts, croutons & craisins.












Add Oil & Vinegar and Toss for an AMAZING Taste!













Garnish your chicken with the salsa and OOOOOOOOOOhhhh Baby!  You are in for a TREAT!  I'm not even kidding!  My 5 year old son even likes it!



Note:  If you are not 'keen' on spicy....use LESS of the rub per chicken breast.  It makes a HUGE difference.
