Fall Tablescape


 
For my birthday this year, I wanted to have some of my closest friends over for dinner to enjoy wine and make homemade pasta with me!  A fall night like this with a bon fire and people I love , here to enjoy good food and good wine... seriously, how much better does that get! 

(Full disclosure, it was not actually fall the night of this party but it was in mid September and that's good enough for this fall lover.)

The catch was, I had this vision of the kind of evening that I wanted so I had to have it at home,  and needed to be the hostess.  Now my hero husband does all the dirty work, so I still got to enjoy only the parts of throwing a party that I truly love.

It was a beautiful day on the day of the party, yay!  I'm not sure how this would have gone had it not.  But I guess I would have improvised.  This was only important because I wanted the dinner party to be outside!

I put together several fall plants such as cattails, daisies and leaves from a tree in my yard.  I had a couple dozen orange roses I got half price on clearance at the grocery store, as they were on their last leg.  The roses were great for one last day once I pulled off the outer layer of pedals on each one.  I gathered candles and lanterns and candle holders.  Found some rattan chargers, burlap and decorative fruit/corn/artichokes in the attic and brought it outside to create something. (Fresh pumpkins were not yet out in the stores at this point so they were not an option)




We had a tree fall down in our yard in a storm a few weeks before the party.  My husband was awesome enough to cut up several of the larger branches into different lengths for me.  I didn't know what I would use them for yet, but I knew I'd find something!  This table, was the perfect place for their debut.





THIS, is my favorite part of having a party.  The decorating!  I had a party of 12 (counting me) coming so I had a long table to set up.  Now in my dream world I would have tables the same size and all matching chairs for events like this, but that's not reality.  And to be honest with you,  I am the most creative when I don't go buy everything new, and have to create from what I already have.

I borrowed a couple white table clothes from my mom and an extra card table and chairs from a friend, in addition to what we already had. 

I started by placing my tallest item (the cattails) in the middle and then evenly placing the other items throughout the rest of the table.  Then I added the plants on the candle holders and candles on the cute log lengths.  Slowly I layered everything in.  I was at a point where I needed a filler.  That's when I looked around and starting cutting leaves from a local maple tree.  They worked perfectly! 

After my centerpiece was done, I set my table with the plates and glasses and even found some fall cloth napkins in my buffet.  I didn't have enough of the chargers for every place so I alternated to give the table some additional texture.  Then, it was time to light the candles as guests arrive to set the stage for the evening!

Now what would a party be without the people!  It was really such a fun evening.  I had everyone help me make the homemade pasta by running it through the pasta roller too.  It made the dinner interactive and was so much fun.  We had a wine tasting too. We hid the wine bottles in sacks and numbered them so you couldn't make a judgment based on the name of the wine.  Adding wine note cards to put comments on each wine tasting made it feel a little like the real thing.




We had the bon fire set up with wood and brought our chairs over later in the evening as it got chilly, and the party went well into the night.


I haven't had a birthday that truly filled my soul like this one in several years.  I am so blessed to have such amazing people God has placed in my life.  It was one of those nights where you actually take a step back and look at the moment, and breathe it in.  Almost like you step outside of yourself and view the moment for what it is.

Meatballs with Marinara Bow-tie Pasta


Meatballs with Marinara Bow-tie Pasta!

I am SO BLOWN AWAY at how successful this blog is becoming...and who would have thought that I'd be a blogger? hmmmmm :)

 So this is MY healthy version of a meatball...FILLED with taste but FULL of nutrients and HEALTHY ingredients.  I saw a recipe on a cooking show...then started twisting it and changing it and even sent out a little different version of it to friends and family a couple months ago.  But this, I think WE GOT IT RIGHT! ;)

I let my 5 year old son pick out the pasta...he picked BOW-TIE!

Nutritional Info Per Serving:  About 450 calories with pasta and the sauce
Preparation Time: About 15 minutes
Servings: About 6  (2-3 meatballs per person)
                                                                                
1/2 - pound of 99% Fat Free Extra Lean Foster Farms Ground Turkey
1/2 - pound of 96/4% Fat Free Extra Lean Hamburger
1/2 - small onion, grated (I use a cheese grater so the kids don't taste chunks!)
3 - garlic cloves, grated (I use a small zester to make it almost like a mush that mixes flavor into the meat)
1 - large egg
1/4 - cup Italian dried bread crumbs (keep it in the freezer!  stays fresh longer!)
2 - tablespoons fresh basil, chopped (you could use 1 tablespoon of dried if you don't have fresh)
2 - tablespoons baby spinach, finely chopped
1/4 - cup Parmesan cheese, shredded
1 1/2 - teaspoons sea salt
1/2 - teaspoon ground pepper, freshly ground if you can.....
12 - oz of Bow-Tie Pasta (we use whole wheat)
26.5 - oz can of Hunt's Organic Traditional Pasta Sauce
1 - 2 - tablespoons of Extra Virgin Olive Oil



Start by heating up your  Extra Virgin Olive Oil in your large skillet over medium heat.  (I only use a small amount at the bottom of the pan - this oil is GOOD for you but ONLY in moderation.  

Play it by ear...but use as little as you think you can.)


 Next, start your water boiling for your pasta.


Now comes the FUN part.  Add the first ELEVEN ingredients to a large mixing bowl and USE YOUR HANDS to mix it all up!  Make sure you mix it really really good!





(TIP:  Take off any rings...it will get into EVERYTHING if you don't)


Now....ADD your PASTA to the water and cook Al Diente!  Should be about 10 minutes but read your package. :)


Then when it is all mixed through...kick up the heat on your skillet to medium high heat.  Start forming small meatballs and putting them in your hot oil.  (Bigger than a cookie ball, but smaller than a snow ball...LOL)  I don't know how to gage this!  But there isn't any exact science...you have all seen a MEATBALL before, right??? :)








Then brown them on all sides.  Make sure they get brown and cooked on the outside turning them pretty consistently.  It will cook for about 5-8 minutes or so. 











Your pasta should be just about done now too....toss it into the skillet with your meatballs and add your sauce.  Toss it altogether and WAAAAA LA!  Perfecto Italiano!!!  




 
 
 (My 5 year old son even ATE it with the green things in it because it was BOW-TIE's)

Baked Salmon with Feta & Couscous Salad

So today is an icky yucky rainy day and I am in MAJOR need of some sunshine!  To top it all off I spent a large part of my day doing taxes!  Yikes!  Nothing like waiting until the last minute.
Anyway, tonight's recipe is Baked Salmon with Feta & Couscous Salad! I can get my little brother over here for dinner with VERY little notice when I make Salmon...cracks me up!  It's super good and super healthy....but I'll be totally honest here.  It took me awhile to get my kids to eat this meal.  I just keep re-introducing it though and they eat more and more each time.  Enjoy....I would LOVE to have your 'comment' and hear how you liked it!!
 
Nutritional Info Per ServingONLY ABOUT 450 CALORIESl!!!(with the salad)
Preparation Time: About 15 minutes             
Cook Time:  About 30 minutes
Number of Servings:4 for the fish but you will have left over Couscous Salad for lunch!
                                                                                     
Salmon:
1 - 1 pound fillet of Salmon (I usually buy the tail end because there likely isn't any bones)
2 - tablespoons of your favorite seafood seasoning
2 - tablespoons of fat free feta cheese
1 - tablespoon of parmesan cheese
2 - tablespoons of extra virgin olive oil
Pam cooking spray

Couscous Salad:
1 - cup of chicken stock
3/4 - cup couscous
2 - teaspoons of cumin
1/2 - finely chopped spinach
1/4 - cup craisins
1 - cup garbanzo beans/chick peas
1/4 - cup fat free feta cheese
2 - garlic cloves, minced
1/4 - cup of toasted walnuts
2 - tablespoons extra virgin olive oil
Salt (I use Sea salt)
Pepper

Preheat Oven to 400 degrees



Line your broiler pan with tin foil and spray with Pam cooking spray
Place your salmon fillet on prepared pan.
Evenly coat your salmon with the 2 tablespoons of extra virgin olive oil. 
Sprinkle your favorite seafood seasoning evenly over the salmon fillet

Note:  Check out the My Favorite Things tab for MY FAVORITE SEAFOOD SEASONING!  You won't be sorry!
Add both your feta and parmesan cheese evenly over the salmon and bake for about 25 minutes.  This cooking time can vary according to how thick your fillet is.



Add chicken stock and cumin to a medium sized pot and bring to a boil.
















Remove liquid from heat and add your couscous.  Cover and let sit for 5-7 minutes. 
 
Note: Couscous is actually tiny little pieces of pasta...so it's kind of like making a pasta salad. I usually buy it in the bulk section of my grocery store so I can use it whenever.



Once the couscous is done, transfer it to a serving bowl and add your spinach, craisins, garbanzo beans, feta cheese, garlic, toasted walnuts, salt and pepper.  Toss.  Drizzle your 2 tablespoons of extra virgin olive oil and toss again. 

  Now...While your waiting let's set the table!  Trying new things at the table with different color schemes can make it fun and even more appetizing to sit down to dinner!  Here is our table this evening!



Time for dinner!  Whooooo hooo!  That was super EASY and super FAST!  Plus it's full of several of the 'super foods' so it's really good for you!
