Fall Tablescape


 
For my birthday this year, I wanted to have some of my closest friends over for dinner to enjoy wine and make homemade pasta with me!  A fall night like this with a bon fire and people I love , here to enjoy good food and good wine... seriously, how much better does that get! 

(Full disclosure, it was not actually fall the night of this party but it was in mid September and that's good enough for this fall lover.)

The catch was, I had this vision of the kind of evening that I wanted so I had to have it at home,  and needed to be the hostess.  Now my hero husband does all the dirty work, so I still got to enjoy only the parts of throwing a party that I truly love.

It was a beautiful day on the day of the party, yay!  I'm not sure how this would have gone had it not.  But I guess I would have improvised.  This was only important because I wanted the dinner party to be outside!

I put together several fall plants such as cattails, daisies and leaves from a tree in my yard.  I had a couple dozen orange roses I got half price on clearance at the grocery store, as they were on their last leg.  The roses were great for one last day once I pulled off the outer layer of pedals on each one.  I gathered candles and lanterns and candle holders.  Found some rattan chargers, burlap and decorative fruit/corn/artichokes in the attic and brought it outside to create something. (Fresh pumpkins were not yet out in the stores at this point so they were not an option)




We had a tree fall down in our yard in a storm a few weeks before the party.  My husband was awesome enough to cut up several of the larger branches into different lengths for me.  I didn't know what I would use them for yet, but I knew I'd find something!  This table, was the perfect place for their debut.





THIS, is my favorite part of having a party.  The decorating!  I had a party of 12 (counting me) coming so I had a long table to set up.  Now in my dream world I would have tables the same size and all matching chairs for events like this, but that's not reality.  And to be honest with you,  I am the most creative when I don't go buy everything new, and have to create from what I already have.

I borrowed a couple white table clothes from my mom and an extra card table and chairs from a friend, in addition to what we already had. 

I started by placing my tallest item (the cattails) in the middle and then evenly placing the other items throughout the rest of the table.  Then I added the plants on the candle holders and candles on the cute log lengths.  Slowly I layered everything in.  I was at a point where I needed a filler.  That's when I looked around and starting cutting leaves from a local maple tree.  They worked perfectly! 

After my centerpiece was done, I set my table with the plates and glasses and even found some fall cloth napkins in my buffet.  I didn't have enough of the chargers for every place so I alternated to give the table some additional texture.  Then, it was time to light the candles as guests arrive to set the stage for the evening!

Now what would a party be without the people!  It was really such a fun evening.  I had everyone help me make the homemade pasta by running it through the pasta roller too.  It made the dinner interactive and was so much fun.  We had a wine tasting too. We hid the wine bottles in sacks and numbered them so you couldn't make a judgment based on the name of the wine.  Adding wine note cards to put comments on each wine tasting made it feel a little like the real thing.




We had the bon fire set up with wood and brought our chairs over later in the evening as it got chilly, and the party went well into the night.


I haven't had a birthday that truly filled my soul like this one in several years.  I am so blessed to have such amazing people God has placed in my life.  It was one of those nights where you actually take a step back and look at the moment, and breathe it in.  Almost like you step outside of yourself and view the moment for what it is.

Chicken Chili with Bacon & Pineapple


Chicken Chili with Bacon & Pineapple!!!

I LOVE Everything about FALL!  The crisp air and clear blue skies, the smells of pumpkin and spice, watching God's beauty in the changing of the leaves and landscapes, decorating with scarecrows, pumpkins and corn stalks, wearing vests and scarves and rain boots---and making STEWS & CHILI!!!!!

This is a family favorite around here and I came up with it by trying to make a chili that I tasted at our local CHILI COOK OFF in town!  It's not exactly like THAT one but I think I've got as close as I can without having his recipe in hand :)

MAKES one large pot of Chicken Chili with Bacon & Pineapple!!!

3-4 Large Boneless Skinless Chicken Breasts
4 tablespoons Extra Virgin Olive Oil
1 medium sized sweet onion
1 green pepper
6 - large garlic cloves, minced
1 package of bacon, cooked
3 cans of pinto beans, drained
3 cans of red beans, drained
1 - 36 oz can of Hunt's Traditional Spaghetti Sauce (or your favoite)
1 - 16 oz bottle of Sweet Baby Rays BBQ sauce (or your favorite)
1 package of Chili Seasoning
1 can pineapple chunks, drained
Green Onion, for garnish
Shredded Cheddar Cheese, for garnish



Start by bringing half of a large pot full of water to a rolling boil.  Salt the water and add your chicken breasts.  Once the water has come back up to a rolling boil, cover and kick the heat down to medium high heat boiling chicken for about an hour. Drain the chicken and then dice it up into fairly large bite size chunks.  (You don't want the chunks too small or they will fall apart in the chili)


 



Next, add your 4 tablespoons of Extra Virgin Olive Oil to another large pot (this is the one your chili will be in).  Heat the oil over medium high heat.  











Dice up your onion, green pepper and mince your garlic cloves.













Once your oil is heated -- go ahead and toss in all of the onion.  Saute the onion for about 5 minutes and then add your green pepper and garlic for about 3 more minutes.  
NOTE:  Your just trying to soften and bring out flavors....not cook it down.  This way you still have some texture and lots of flavor in the chili!

Toss in the chicken and turn your heat down to medium mixing everything together. 



Now....it's time to add the BACON!  BACON makes EVERYTHING BETTER!!!! :)  I cook my bacon in the oven at 400 degrees on a cooking rack inserted in a cooking sheet.  this way all the grease drains off the bacon.  When it's done---I blot EVERY piece to dry off as MUCH GREASE as possible before it cools off and 'becomes part of the bacon'!




Chop your bacon into similar bite size pieces to your chicken and toss it in the chili pot!  Trying to keep everything somewhat uniformed in size and edible :)










Add ALL of your drained beans, can of spaghetti sauce, chili seasoning packet and BBQ sauce and stir until mixed thoroughly.  Add your pineapple last and stir.









At this point....everything is cooked.  Heat it up over medium heat for about 15-20 minutes and it should be ready to serve!!!!!



I usually serve my chili with shredded cheese and green onion on the side so people can garnish if they want too!  The perfect topping for an AMAZING chili!









I HOPE you enjoy the chili as much as my FAMILY and I do!  Traditionally -- we make chili and cornbread when carving pumpkins so I can assure you...we will make it again this fall!!!!

Fall is my VERY FAVORITE time of the year and although it's not quite fall, our weather is starting to turn, kids are back in school and I just can't RESIST the urge to add some Hints of Fall into my decor!!!!!

I just had a birthday not long ago and my mom bought me this BEAUTIFUL basket weave pottery bowl that I am absolutely IN LOVE WITH!!!!

I pulled out some of my dried fall decor that I keep in my storage bins since the pumpkin and squash are not out for the BUYING yet around here :)  You can buy some too by clicking HERE!  I make SURE to use NATURAL Preserved Leaves though anywhere in my home because the plastic ones....well...they just don't cut it!



I always LOVE to have a candle of some kind on my dining room table sooooo --- I chose a canning jar out of my cupboards and put a candle inside to keep with the overall feel and design of my bowl and decor.


Start layering in your items tucking in the leaves and arranging things so they are balanced -  And YOU END UP WITH A FUN HARVEST FILLED FALL ARRANGEMENT for your home!!!!



Adding a hint of fall??  Try tucking the Natural Preserved Leaves in with a candle arrangement!



Or up on your mantle......



And a simple craft store scarecrow will greet your visitors at the front door!!!!
